A while ago Melinda gave me a recepie for Fannie Farmer Spanish Rice. I have fixed it and it has a wonderful flavor so today I decided to fix it for our company that was coming over after church.
As I started to prepare it I discovered that I was out of a couple of ingredients so I modified the recepie and used what I had on hand and WOW was it good!
For any of you that might like to try it; here it is:
Set oven for 375
Grease a small roasting pan or a 9x13 cake pan
Chop up:
enough celery to make 1 cup
1 Medium green bell pepper
1 cup of Mushrooms ( optional)
1 medium white or yellow onion or use 1/4 to 1/2 cup diced , dried, onion
Heat 1/2 cup olive oil in a large skillet
Sautee the celery, green pepper, mushrooms and onion for 5 minutes or until tender
Pour the sauteed veggies into the pan and cover with 2 cups long grain white rice.
Next pour 1 - 24 ounce jar of MILD Pace Picante sauce over the rice and veggies
Heat four cups of chicken broth until very hot. Pour over the contents in the pan and stir until well blended. Bake for 1/2 hour. There were four adults and three children here today and we all had plenty to eat. I served a garden veggie salad with it. We also has some fresh squuezed apple juice from my apple trees. Best tasting meal I have fixed in a long time!
